After two decades in the culinary industry, Greg Nalley has achieved what he considers an unexpected success. Despite a non-linear journey, Nalley now oversees a growing enterprise in the Baltimore region. The recent opening of his eighth Nalley Fresh restaurant in Columbia is met with a high demand for the distinctive salads, bowls, and wraps offered by the chain, prompting plans for further expansion. It's worth noting that this progression might not have materialized if it weren't for a pivotal moment in 2001 that spurred Nalley to pursue his lifelong aspiration of owning a restaurant.

Following a life-altering cancer diagnosis, Nalley took the courageous step of launching his first restaurant, Harvest Table, at Tide Point. The eatery became popular within the nearby Under Armour community. Subsequently, Nalley sold Harvest Table and began revitalizing struggling restaurants through consulting and acquisitions. The concept of Nalley Fresh emerged during a moment with his children; in 2011, Nalley inaugurated his inaugural Nalley Fresh establishment on Baltimore Street, blending the customization approach of venues like Chipotle with a broader selection of nutritious fare.

In 2012, Nalley expanded to a second location in Hunt Valley, catching the attention of Phil and Brad Hoag. Phil Hoag, the pioneer Burger King franchisor in Maryland, and his son Brad, the debut Qdoba franchisor in Maryland, took an interest in Nalley's vision. Brad recognized the potential of Nalley Fresh as the next big thing in Baltimore, sparking a fruitful partnership that has propelled the company forward.

Nalley gives credit to his workforce of 120 employees, whom he views as collaborators. Recognizing that excellent food and ambiance can be undermined by negative staff attitudes, he places high value on employee demeanor. Noteworthy collaborations include crafting custom meals with local fitness centers to offer approved options to health-conscious clients. Demonstrating dedication to their patrons, Nalley Fresh has introduced a loyalty program to reward frequent customers.

Looking ahead, Nalley envisions further expansion beyond Maryland and aims for a total of 15 to 20 stores within five years. Expressing optimism about breaking into the fast-casual market, he emphasizes the enduring nature of his journey towards success. Despite challenges that may have steered others away from their passions, Greg Nalley's perseverance remains resolute. Reflecting on his experiences, he maintains pride in the progress achieved after years of dedication.
